    Enjoy new ways to dress up fresh ingredients all summer long with these healthy lettuce-free salad recipes and dishes made for entertaining. Each recipe highlights a few core ingredients while bringing in easy-to-whip-together dressings and fresh herbs that make them pop with color. Serve with grilled meats or simple mains, and watch everyone eat all of their fruits and veggies.

    Creamy Corn Salad with Boursin Dressing

    A creamy dressing made with Boursin cheese is the secret to this corn, plum, and basil salad. Green onions give it additional garden-fresh flavor, and complement the herby cheese perfectly. You can also use ripe peaches instead of the plums, if you prefer.

    Kohlrabi and Cabbage Slaw with Peanut Sauce

    This Thai-inspired coleslaw recipe combines red cabbage and crunchy kohlrabi with peanut sauce (purchased or homemade), lime juice, and fresh herbs. It’s a slaw recipe you’ll want to make again and again for summer grill-outs or as a fresh side to Asian-inspired noodle dishes.

    Zucchini Salad with Za’atar Vinaigrette

    Fresh zucchini ribbons get a flavorful upgrade with an olive oil and za’atar seasoning vinaigrette. Cherry tomatoes, feta cheese, and pitted olives round out this salad filled with Mediterranean flavors. We like it as a side for grilled salmon or chicken skewers.

    Fennel, Melon, and Blueberry Salad with White Balsamic Vinaigrette

    If there’s one thing we appreciate, it’s an unexpected (but winning) combination of fruits and vegetables. Fennel sticks are the counterpart to sweet melon and blueberries in this fruit salad where everything works together. White balsamic vinaigrette is slightly sweeter and lighter tasting than a traditional balsamic vinaigrette, and won’t impact the color of the fruit when serving.

    Broccoli Salad

    Take advantage of fresh broccoli with this nutritious and crunchy salad. It has a creamy dressing and big chunks of crispy bacon for plenty of flavor. If you prefer a vegetarian salad, you can use avocado or olives instead of bacon. You can also add in more crunchy vegetables like bell peppers, cucumber, or chopped celery.

    Refrigerator Jam

    Pick up the two ingredients required for this refrigerator jam at the farmers market. This recipe calls for your choice of berries and honey, and you don’t need to do any canning—simply boil the berry mixture, mash, and cool. The best part? It keeps up to one week in the refrigerator, so you can have delicious jam on toast all week long.

    Blender Spinach Pasta

    Whip up a quick and easy pasta dish with a sauce made from spinach and plenty of herbs, using one of our favorite kitchen appliances. A blender gets the sauce nice and smooth, and the spinach and herbs makes it bright green. It’s a fresh and delicious dish that tastes different than pesto pasta, and is delicious served warm or cold.

    Mediterranean Carrot Ribbon Salad

    Use different colored carrots in this Mediterranean salad that looks vibrant and tastes extra fresh. It’s everything you want in a Mediterranean salad including garbanzo beans, feta cheese, and olives. A light dressing coats every vegetable perfectly. Enjoy or as a light vegetarian lunch, or as a side to grilled chicken or baked salmon.

    Chili Watermelon Relish Salad

    This chili watermelon relish salad is a sweet and spicy topping for all of your favorite summer protein dishes (like grilled fish). Pick up fresh watermelon, peppers, and cilantro at the farmers market, and transform a basic dish into a gourmet experience with this perfectly crunchy and slightly-spicy combination.

    There are few better ways to begin a meal than with a cool and flavorful summer gazpacho. We like this watermelon soup for its simplicity, color, and delicious flavor. With fresh mint, lemon, and plenty of melon, it’s a great way to use up your farmers market produce. A little Greek yogurt adds a creamy element that gets incorporated perfectly.
