Carbone Riviera Will Be Major Food Group’s New Fine Dining Restaurant in Vegas

Major Food Group will be opening a new, seafood-focused iteration of its famed Carbone restaurant in Las Vegas this Fall. Carbone Riviera has a rather decadent perch along the Strip, too: The locale will be housed within the Bellagio, with its famed fountains as the eatery’s backdrop.

The Carbone Riviera marks a new endeavor for the Major Food Group cofounders, Mario Carbone, Rich Torrisi, and Jeff Zalaznick, in partnership with MGM Resorts International. Renowned designer Martin Brudnizki was tasked with transformed the Bellagio’s former French restaurant Picasso into the new concept. Upon entering the space, you’ll be greeted by a large display of seafood—everything from whole Dungeness crab to sea urchin to razor clams—all flown in daily for patrons to enjoy. The whole-fish menu will include dishes such as salt-braked branzino, grilled Dover sole, and spicy lobster meatballs, as well as Carbone’s famed spicy rigatoni vodka. And, of course, you can expect the same theatrical service here as other Major Food Group hot spots, with some tableside presentations thrown in.

“This is without exaggeration one of the most important, not to mention gorgeous, restaurant spaces in America—to say it is an honor to be its latest steward does not do this moment justice,” Carbone said in a press statement. “We at Major Food Group take tremendous pride in carrying forward storied culinary legacies. At Bellagio, we will have the chance to create a dazzling new sibling to our iconic Carbone, as well as a new chapter for the city’s dining culture with a timeless yet thrilling concept. We intend for Carbone Riviera to be the culmination of the decades we have dedicated to our craft.”

And, if you’re looking to pair your meal with an experience, Bellagio has you covered. For the first time, the resort is allowing guests to coast around its Lago di Como, aboard a 33-foot Riva powerboat. The luxe vessel is a member of the storied boat maker’s Anniversario line, making it one of just 18 to exist. Just think of the cruise as an appetizer to your dinner at Carbone Riviera.
