Easter is nearly here, which means carrots are on the menu. And, of course, TikTok has found a way to give the classic holiday ingredient a makeover. Remember that controversial carrot bouquet? Some called it creative; others worried about food waste since the carrots were hollowed out to hold stems.
But here’s a clever pivot: Juice the insides for a carrot cocktail, the latest spring mixology trend on TikTok. These colorful, customizable drinks range from sweet to herbaceous and are (mostly) easy to make. Here are three versions making their rounds right now.
The Carrot Spritz
The creator of this Carrot Spritz (@elizabethvanlierde on TikTok) likes to call her creation “garden to glass,” and it’s surprisingly simple to make for something that looks so polished. You’ll use fresh carrot juice—store-bought works just fine, so there’s no need to dust off the juicer. Pair that with OJ, Aperol, Prosecco, and soda water. It’s very much like an Aperol spritz, just better. (Skip the Aperol and Prosecco and just use soda water for a quick mocktail version.)
She finishes the drink in a coupe glass with a small carrot ribbon garnish, but you could also add a sprig of thyme. The result is a light, citrusy, and slightly earthy cocktail for your Easter brunch toast.
The Carrot Bloody Mary
Carrot juice tends to be on the sweeter side, but this “Bloody Mary” cocktail from @colettescocktails brings all the herbaceous flavor you could want—and in a batch size. The brunch-friendly recipe makes four Carrot Bloody Marys with a complex flavor that any savory lover will appreciate.
The surprise ingredients (pistachio, apple, and ginger) come to play in a homemade simple syrup. If you don’t have these on hand—or don’t want to make a syrup—stick to vodka, lemon juice, and carrot juice for a simplified take.
The Carrot Cake Martini
If you want a carrot cocktail that doesn’t taste so much like you’re just drinking boozy carrot juice, give this one a shot. The Carrot Cake Martini from @oheyashleykay looks as good as it we imagine it tastes.
You need vanilla vodka (or regular vodka and vanilla extract), carrot juice, of course, a little lemon juice, butternut schnapps, and some Irish cream liqueur, which brings the cake flavor. Simple syrup is optional, but make sure you coat the rim! Before pouring in the cocktail, partially cover a martini glass rim in vanilla icing, then roll it in a combination of coconut flakes, grated carrot, brown sugar, and crushed nuts to top it off.
