Colorado Just Got Its First Michelin Two-Star Restaurant

There’s cause for celebration in the Centennial State, as Michelin has bestowed two stars on a Colorado restaurant for the first time.

Earlier today, the tire company that dabbles in food criticism unveiled its third annual ratings for a select group of cities around the state and Denver‘s the Wolf’s Tailor was promoted from one star to two. “Chef Taylor Stark and his team stitch together an ambitious multi-course menu from culinary influences near and far,” the guide wrote in a statement accompanying the announcement. “A rigorous commitment to local sourcing as well as gorgeously manicured presentations underpin these far-flung creations.”

A trio of Denver restaurants made their debut in the guide at the one-star level as well. Toshi Kizaki’s eponymous omakase counter opened just this spring in the Mile High City, but he notched a star only a few months into service. Of course, he and his brother have been trailblazers on the Denver scene since opening Sushi Den in 1984. Chef Justin Fulton moved his Margot pop-up into a permanent space back in May serving a tasting menu with local and global influences at an eight-seat counter. And Justin Curiel’s ode to Mexico City Mezcaleria Alma received a star one year after Curiel’s neighboring restaurant Alma Fonda Fina earned its first star.

Elsewhere in the state, last year’s recipients—Beckon in Denver, Bosq in Aspen, Brutø in Denver, and Frasca Food and Wine—all retained their one-star status, while no restaurants were demoted this year.

The Michelin Guide first arrived in Colorado in 2023, with a little help from tourism boards around the state. The state tourism board is paying Michelin $100,000 per year for three years while local boards (Denver, Boulder, Aspen, and Vail) and two resort companies (Beaver Creek and Snowmass) each gave the guide $70,000 to $100,000. The deals are similar to what tourism boards in California, Texas, Florida, and more have paid to get Michelin to come to town. In Colorado these deals have meant that although the guide is named after the whole state, inspectors cover a handful of participating cities. So for now, it’s just nine total restaurants across Colorado with a star to their name.
